Sandwich with vegan cheese, mushrooms and pickled red onions

Switch from the traditional ham and cheese sandwich to this whole vegan fresh cheese sandwich with mixed cashews. Garnished with good button mushrooms, pickles and baby spinach, this sandwich is perfect for a healthy and delicious lunch break, or for a family picnic as soon as the warm weather arrives.

Ingredients (for 4 people):

For vegan cheese:

  • 250 g tofu
  • 45 g cashews
  • 1 small shallot
  • 1 small garlic clove
  • 20 g olive oil
  • 10 g chervil
  • 10 g flat parsley
  • 30 g pitted black olives
  • Fine salt

For sandwiches:

  • Brioche buns
  • 250 g button mushrooms
  • 1 drizzle of olive oil
  • Pickled red onions
  • Spinach sprouts

Preparation:

1. Swell the cashews the day before in water.
2. The next day, drain the cashews and then pour them into the mixer bowl. Mix them with tofu, parsley or French parsley (chervil) , garlic, shallots and salt.
3. Add the olives and mix again. Then cut the previously washed button mushrooms into thin strips.
4. Fry the mushrooms in olive oil with a pinch of salt.
5. Cut the brioche buns in half, then spread the two sides with the sauce. Then place the mushrooms and pickles of red onions, and finally the spinach leaves. Close the sandwich and enjoy immediately.
